Netlify Forms privacy concerns

For those using Netlify Forms for their client’s websites, how do you go about privacy / GDPR and having read access to their website form submissions on the Netlify dashboard?

Do you make the client aware in your privacy policy / contract that you have read access but will not share their data, etc?
