I have a site that I’m working on and would like to connect Netlify DNS (to prep for release), but I don’t want it to publish any of my branches yet. Is this possible to do? I haven’t seen any setting for this.

You could certainly delegate DNS for a domain, and configure all appropriate records and when the time comes configure it as a custom domain on a site.
